But once you sit down and actually try to learn and use those systems you'll realize they aren't as deep or hard to understand as they look, if you like the WW2 theme go for it, it's a good game, the AI isn't very good, specially if you know how to do some of the more advanced maneuvers like cutting supplies, using many naval landings or airdrops, using quick tank divisions to breach & encircle enemies, etc. There's also HoI4 which is very intimidating and it looks very complex with weapon production, factories, etc. Stellaris is a bit different from the rest, and much closer to the usual 4x games, if you're used to those you'll understand the game in no time, it can be slightly challenging for new payers, but if you're one of those willing to sit and study the wiki for a day to understand all the systems and how to minmax every pop and job in your empire you'll quickly find out that even the max difficulty AI can't do anything to you either, but that's something you shouldn't care about for hundreds of hours, and it's still certainly a few dozen times harder than CK3.

If you're interested, EU4 is a bit old by now but it's the complete opposite, the systems are very easy to understand, but the AI is the least bad out of all Paradox games, so it will beat the crap out of a beginner or even an intermediary player, even if you play the strongest nations in the world, if you don't have much patience, but do enjoy a challenge, that one might be a good pick. Honestly, CK3 may be, by far, the easiest paradox game, but it's still Crusader Kings, so there's a LOT you need to learn to simply understand what's going on, the UI does a good job at explaining what's going on and guiding your next steps, if you're patient you'll do fine, but do expect a kinda steep learning curve, followed by a very, very, very easy gameplay.
